chore: purge obsolete .archive docs and relocate CI workflows

- Remove 5 outdated TabataFit/Expo concept docs (.archive/)
- Rename .gitea/workflows -> .github/workflows
- Ignore build/ directory
- Add Xcode UserInterfaceState
